The main ones that stick in my mind are Polaris being unhinged at her wedding, and her big debate with Xavier on Genosha

EMP, Emma didn't just drop Sublime. Martha made him let go. I definitely don't think Emma minded though.
Which brings me to
Emma slapping Hope after she brought Shaw to Utopia.
Emma "dying" whilst taking out the Skrull Telepath Wall thing.
Emma saving Scott's life by sticking her fist through Tattoo's forehead.
Emma matching Xavier in battle and holding him hostage to the memories of his own sins all the while surgically scanning for Sinister psychic infection.
Another badass Jubilee moment was when she goaded Emplate into supping on her powers and then losing control of them by angering him. Also, when she devised the plan for Husk and M to take Synch-Plate down.

I liked in God Loves, Man Kills when that random security guard took out Stryker. In all the rampant helpless bystanderism that plagues the Marvel universe, here was somebody who had the capacity to act and actually did so. Sometimes being a hero means just doing what's right at the right time, not wearing a costume or being anybody who people would otherwise pay attention to.

LOVE IT! There's been some of that by a few writers, but most writers leave police, and militaries in the background as helpless victims.... even when they have weapons that could be used to take out the bad guys or at least slow them down a lot.
